These Quinoa and kale bowls with sweet potatoes, goat cheese, and cranberries will have your taste buds and your body thanking you!

There are days when I feel like I’m bouncing back and forth (literally, bouncing a baby on my hip) from the time-out chair to the stove and back. I usually try to plan easy meals for when my husband won’t be home to keep the kids occupied. I know I’ll be needing to hop the gate into the livingroom to save the little guy from the big guy at least every other minute.

These can be exhausting times, but when I’m finally sitting down, and both kids are strapped in their chairs happily shoveling in quinoa and kale, what felt like an entirely failed day, suddenly feels like a win!

Honestly, I was surprised the kids loved this meal as much as they did. I think the cranberries have a lot to do with the appeal. This one is easy, fairly inexpensive (vegetarian), and healthy! All around, this is a great choice for a weeknight family dinner.

Ingredients
Instructions
  1. Combine quinoa and water in a small pot and bring to a boil. Cover and turn heat down to simmer about 15-20 minutes until done.
  2. While quinoa is cooking, sauté sweet potatoes in vegetable oil until tender, adding salt and pepper to taste. Set aside.
  3. In the same pan that you cooked the potatoes, sauté onion until soft and translucent.
  4. Add kale to onion and mix until wilted.
  5. Add dried cranberries and potatoes to onion and kale and stir to combine.
  6. Finally, add goat cheese and mix in well.
  7. If you like, drizzle some balsamic vinaigrette over the dish before eating. Enjoy!
