Fettuccine in Creamy Sundried Tomato Sauce. Guys.
First of all, let me just say I successfully made this with two screaming kids in tow. I think it was the perfect storm of hunger, tiredness, and a literal storm outside. They were miserable.
I had to get something on the table, especially since I knew that would help tame the beasts. You know what? This was the perfect meal to make on such an occasion. The hardest part was chopping the onion, garlic, and mushrooms, which took approximately 5 seconds. After that, everything could pretty much be done with one hand. And it had to be, because my other hand was busy holding a baby. (FYI, said baby ate approximately 3 helpings of this).
I know I’ve made something like is before, but of course I didn’t write it down. When my husband expressed how much he loved it, I thought sadly to myself that I’d probably not remember how I did it. It would join the many other lost delicious recipes I’ve made up on a whim never to remember again.
Well, let me just say, this dish has been revived. It was familiar and, if not the same as I’ve done it before, better! And now it’s here to be remembered forever! Oh and by the way, have you noticed how simple it is?! It’s one of those dishes you can whip up for guests when you don’t have time but still want to impress.
Why is it so good? The mushrooms and the tomatoes do the work for you. Mushrooms are just flavorful gifts from God as it is. You start sautéing those babies and suddenly the kitchen is filled with the smell of happiness. The tomatoes are especially flavorful because they’re pack in olive oil and herbs (and already julienned, thank you very much!). All you have to do is throw it together with some basics, add cream and pasta, and there you have it!
Time to clean up? All you’ve used is a pan, a pot, a cutting board, and a knife! Nothing that’s going to keep you up all night, that’s for sure!
