Chive and onion haddock

Chive and onion haddock, aka, one of my all-time favorite meals. It’s creamy and crunchy and flavorful. Plus it’s super easy and can be made ahead of time. But that’s not all! It’s also made using just one dish (and a cutting board). I even line the dish with aluminum foil so clean up is an absolute breeze!

When I was first married, I would just cook different things every night. It got kind of exhausting trying to come up with new meals every day. We needed some staples.

I don’t remember what inspired me to make this, but once I got the idea of putting cream cheese on the haddock, I knew chive and onion cream cheese would be even better! (Isn’t it always?!) After we had it the first time, it became a once a week regular. Our first staple meal!

That was over 3 years ago and we still have this dish at least once a month, usually more! I love how simple and easy it is. Oh, and thankfully the kids love it too! It was one of both my boys’ first meals. Definitely a family favorite. Try it out for yourself!

Ingredients
Instructions
  1. Preheat oven to 375°. Line a 13 x 9 baking dish with aluminum foil and spray lightly with cooking spray.
  2. Cover the bottom of the baking dish with onion and tomato slices. Lay fish skin-side down on top and spread softened cream cheese on top of it. Top with bread crumbs.
  3. Place the asparagus along the sides of the dish and in between the pieces of fish. Sprinkle minced garlic on top of asparagus.
  4. Bake for a half hour, or until fish reaches an internal temperature of 145°.
  5. Serve over rice. Enjoy!
Recipe Notes

This is great to make ahead. Just cover with plastic wrap and store in refrigerator until time to go in the oven.
