Caprese Chicken with Pesto

As soon as I can find fresh basil in the grocery store, I’m making Caprese Chicken with Pesto. That’s why this has become one of my favorite summertime dishes. It has all the things I love in a weeknight meal: it’s super easy, can be made ahead of time, and it’s packed with fresh flavor!

I prefer this meal with fresh made pesto, but to make things easier on yourself, by all means, pick up a jar of the pre-made stuff! That’s what I use to get through the winter. I certainly can’t go through the long New England winters without having this meal at least a few times! Come summer, this is at least a once-every-other week regular.

Clearly breaking apart slices of cheese is not my hidden talent. . .

If you generally like extra sauce for your pasta, plan on having some extra pesto. You can also simply drizzle olive oil over the pasta, if needed. If you’re looking to cut carbs, simply omit the pasta! The chicken is great on it’s own or with a side salad.

Another great thing about this meal is that it can be made ahead of time and stored in the fridge. You can also make the pesto ahead of time and keep it in a jar in the fridge. You might even want to make a bunch to stock up for future meals! Once you make this, I’m sure it will become a summertime staple for your family too!

  1. Preheat oven to 375°F.
  2. Line a 9 x 13 baking pan with aluminum foil, or spray with cooking spray.
  3. Lay the chicken along the bottom of the pan.
  4. Cover the chicken with the pesto sauce.
  5. Lay the tomato slices on top of the sauce.
  6. Cover the tomatoes with the mozzarella slices.
  7. Cover with pan with aluminum foil and cook for 20 minutes. Remove the tin foil and cook for another 10 minutes, or until chicken reaches an internal temperature of 165°F.
  8. Serve over pasta and enjoy!

  1. Highly recommend this recipe! It’s super fast to make and with a few ingredients, you don’t have to buy much to make it. It’s delicious and tastes great as a leftover. You can also make it ahead of time and throw it in the oven later. Highly recommend!
